Y is for Yam Casserole (Blogging Through the Alphabet)

We are definitely a Disney family. All of our friends know it and like to send us ideas for holiday decorating to fit with the theme. With this in mind, our middle daughter, V2, downloaded a pattern for a terrific Classic Mickey pumpkin that she carved with the boys for Halloween.

As readers of this series will know, I’ve used a couple of Disney recipes as I’ve worked my way through the alphabet and I decided to use another this week.

Animal Kingdom is V2’s favorite park with its wildlife and safaris so I chose my Y recipe with this in mind, the Yam CAsserole from Tusker House. I apologize, I don’t seem to have a photo of it but there are many you can find online.

I love that Disney is so generous with their recipes (plus many folks post them online once they have them) so you can make your favorites at home. This casserole is different than the typical marshmallow-topped dish of sweetness that you find on many buffets. Yes, this one has a definite African flair (of course I have never been there but it has what I think of as an African flair).

There is one other issue with this recipe. I thought perhaps I had typed it out wrong but chasing around the internet I see the same omission in every other post, while you are instructed to add butter, there is no amount in the ingredient list. This is something I am going to have to do some testing with since our youngest grandson loves both sweet potatoes and coconut milk.

So here it is, my missing parts recipe for the Yam Casserole from Tusker House at Animal Kingdom.

Yam (Sweet Potato) Casserole

4 pounds canned yams or sweet potatoes
7 ounces coconut milk
6 ounces brown sugar
1/2 ounce vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
2 ounce toasted coconut
4 tablespoons cornstarch
2 cups orange juice

Drain the juice from the sweet potatoes. Place potatoes into a pan or casserole dish. In a bowl mix the sugar, butter, and coco fiesta. Add the orange juice, cornstarch, nutmeg, cinnamon, and vanilla. Pour the mixture over the potatoes Cook at 350-degree oven for about 30 minutes Top with the toasted coconut.
