Z is for Zocalo Chicken (Blogging Through the Alphabet)

Here we are at the Letter Z, the end of this session of Blogging Through the Alphabet. Although there have been some late posts, I’ve managed to catch up and have a recipe for every letter of the alphabet.

For this final week, I went back to City Hall at Disneyland and found a delicious recipe from one of our favorite restaurants there, Rancho del Zocalo. Hubby and I love this spot in Frontierland where we can sit and enjoy the sunshine amidst the lovely cacti and flowers.

So here you have it, my last recipe of the alphabet. Please remember these Disney recipes are LARGE, so adjust them accordingly for your family.

Zocalo Citrus Marinated Chicken

Marinate

1 gallon of water

1/4 cup of sugar

3 tbs of salt

2 tbs of garlic powder

3 tbs of onion powder

1 tbs of lime powder

2 tbs of lemon powder

1/4 cup of corn syrup

3 tbs dried parsley (crushed)

2 cups pineapple juice

Directions

In a container mix all the ingredients above except for the chicken.

Add the chicken and marinate for at least 4-hours or overnight.

When ready to cook turn on your broiler and brown the chicken for about 3 minutes on each side. Preheat oven at 350 degrees and roast for 35-40 minutes until internal temperature reaches 165 or above. Serve.
