We’ve been traveling again this week and I am super late with my Blogging Through the Alphabet post! My #3 daughter helped me out by baking some shortbread cookies and sending me the picture. I can just taste them now, buttery, melting on my tongue and flavored with almond extract.
She loves this recipe from the Fleishmann’s Cornstarch website makegood.ca. They have several varieties but we like the almond ones best.
|1 cup butter, softened|
|1/2 cup icing sugar|
|1 cup all-purpose flour|
|1/2 cup Fleischmann’s® Corn Starch|
|1 teaspoon almond extract|
|1/2 teaspoon vanilla extract|
|Diced candied cherries, for top|
Preheat oven to 350°F.
Cream butter with electric mixer. Beat in sugar until fluffy.
Mix in flour and corn starch. Mix in almond and vanilla extract until well combined.
Roll into small balls or drop by small rounded teaspoons onto ungreased baking sheet. Place small piece of cherry on top.
Bake 8 to 10 minutes or until firm to touch and just beginning to brown at edges.
Super easy and tasty. V3 does suggest increasing the almond flavoring a bit for her taste, maybe 1 1/2 to 2 tsp or you could increase the vanilla to 1 tsp for something a little different. (We live in a high altitude, dry climate so our dry ingredients are very dry and can allow for a bit more liquid.)
