If there is one thing our grandson loves it’s a yummy quesadilla so I had no doubt this would be my recipe for the letter Q.
We all love Mexican food so when EJ moved up from eating baby food and was looking for something on the menu at our favorite restaurant, a cheese quesadilla was the sensible choice. A simple blend of cheeses melted ooey gooey on a tortilla. What child wouldn’t like that?
As he has gotten older, we began to add in some chicken with the cheese and that works for him these days. He still likes them pretty plain but will dip them into a bit of sour cream (but no salsa yet).
He has also started making his own quesadillas at home and has branched out into making them for the rest of the family as well. We recently celebrated my husband’s birthday with an assortment of Mexican dishes including EJ’s famous quesadillas!
Quick and Easy Quesadillas
Ingredients (for 1 quesadilla)
2 flour tortillas
1/2 cup shredded cheese (we like the Mexican mix, it has a bit of heat to it)
1/2 cup cooked chicken breast (shredded, this is a good way to use up leftovers)
Lay one tortilla on a flat surface, add cheese and chicken. Cover with the second tortilla and press down a bit to squeeze it all together.
Place into a skillet over medium-high heat and let it crisp and brown a bit before carefully turning it over. Repeat with the second side, your cheese should be melted and stringy. Remove from pan and place on a cutting board.
Cut into four or six triangles and enjoy with your favorite toppings. We like queso, salsa, and sour cream.
You can adjust the cheese and chicken to your own taste and try other combinations for fillings as well. Dempster’s Bakery has some great ideas on their website for Yummy Quesadilla Recipes to try.
