P is for Pasta Salad

Summer seems to have passed by so quickly this year, it’s hard to believe we are heading into the Labour Day long weekend already!
In honour of this last barbecue season of summer I thought I’d share my daughter’s favorite pasta salad. She got the recipe several years ago from a friend in Nova Scotia and has added her own twist. Easy and economical it’s a feature at family pot lucks and barbecues alike.
Pasta Salad
Ingredients
1 cup ketchup
1 cup Catalina dressing
1/4 cup sugar
2 boxes noodles of your choice
half a cucumber
1 green bell pepper
1 red bell pepper
1 orange bell pepper
1 cup sharp cheddar, diced (optional)
Directions
Cook pasta per instructions, don’t overcook or they won’t hold up in the salad. Drain well. Cool.
Dice veggies, toss with the cooled pasta noodles.
Add diced cheese (if desired).
Mix ketchup, Catalina dressing, and sugar. Pour over salad and toss gently until well mixed and everything is coated. Chill.
This recipe makes a good sized bowlful, perfect for a crowd.
It makes a colorful addition to your barbecue or pot luck plate.
