This summer has been one of the hottest I remember in our neck of the woods (we even managed to hit a record high one day) so we haven’t been doing any baking in our house but I still like to make up treats. I’m sharing one that my mom used to make when we were kids.
There really isn’t much to it but they are a lot of fun especially if your kids get involved.
Oatmeal Cookie Ice Cream Sandwiches
Oatmeal cookies (mom used to use Dad’s oatmeal cookies but I like the little Dare Breaktime variety, any crispie ones will do)
Vanilla ice cream (amount depends on the size of your cookie, about 3/4 to 1 inch thick is nice)
Scoop ice cream onto the bottom of one cookies, sandwich with the bottom side of another.
You can enjoy right away but I like to wrap them with plastic and refreeze to help them hold up better.
That’s it. So easy and so yummy.
Of course you can change things up too.
Our local Walmart had these cookies on for 99 cents a box and the ice cream for $1 a pint so I let the kids pick out a few combinations.
Rolo and oatmeal and ginger snaps with vanilla were my favorites. EJ liked chocolate chip with Smarties ice cream.
A fun and inexpensive summer (or anytime) treat!
